This represents the Hindu trinity of Brahma, Shiva, and Vishnu, or the threefold qualities of nature -- creation, preservation, and destruction. In Ayurveda and yoga, some also believe the trident represents the three doshas or gunas -- Pitta / Vata / Kapha or Sattvic / Rajasic / Tamasic.
